10 guests. 14lbs, and 16lbs. 10 hour smoke.
Nebraska Star won hands down. The aged wet prime had more tender steer flavor.
Bark and smoke ring equal. juices running after Nebraska rested filled the cutting board grove.
11 eaters choose Nebraska for flavor, and tenderness. Guests destroyed my cap. I had to fight to get a taste. Looks like I am going to need less people or buy a brisket for my self.

Absolutely perfect! Brisket came in slightly over 14lbs, I trimmed and separated the point from the flat. Smoked for about 9 hours. Turned out perfect. The burnt ends was a big hit, actually it all was. No left overs! Thank You Nebraska Star Beef. We'll be ordering again soon.
