The biggest difference between these steaks and our 12 oz End-Cut NY Strip steaks is the cost. These steaks contain a small, fibers band that runs through the back 1/3rd of the steak. We separate these steaks from our standard 12oz End-Cut NY Strips and offer them at a discounted price. • No antibiotics, growth hormones or steroids added.
Steak aficionados know that not all NY Strip steaks are created equal. Many purveyors of beef count on the fact that many customers aren't privy to this detail and sell them mixed together. We separate all of our "end cut" or "vein steaks". Our “vein steaks” are cut from the same USDA Choice or Prime beef as all of our other steaks, but "vein steaks" have a semicircular piece of tendon on the back 1/3rd of the steak. This "vein" can range in size from "hardly noticeable" to "significant." Regardless of the size of the vein, we do not sell these steaks as our premium "center cut" NY Strip steaks. These are still excellent steaks, but there just aren't enough of us to eat them all, and it would be an absolute waste to grind them into burger. We choose to offer them to our customers at a reduced price for folks who enjoy a great steak, and don't mind cutting around a little piece of gristle.
