Cast Iron Skillet
Traegar or Charcoal Grill
- 1 12oz Nebraska Star Beef® Prestige® NY Strip
- 6-8oz or 3-4 slices Liver
- Kosher Salt to taste
Heat a cast iron pan, add tallow and don’t skimp.
Season steak with Kosher salt.
Sear the fat side of steak first. Then the flat sides, about 2 minutes on all, so a nice crust forms. Pull and rest.
Season sliced liver with kosher salt.
Sear in pan, searing will cook the liver, total time approx 4 minutes; approx. 2 min/side. It's thin and cooks quick.
Put the steak on Traeger or charcoal grill until internal temp is about 115° F, this is mostly for a little extra smoke flavor, just make sure internal temp doesn’t exceed 115° F.
Rest for a few minutes, then enjoy. Season with a bit more salt.
I like mine with a glass of wine from an average bottle of Cabernet Sauvignon.
