INSTRUCTIONS

  • Heat a cast iron pan, add tallow and don’t skimp.
  • Season steak with Kosher salt.

  • Sear the fat side of steak first. Then the flat sides, about 2 minutes on all, so a nice crust forms. Pull and rest.

  • Season sliced liver with kosher salt.
  • Sear in pan, searing will cook the liver, total time approx 4 minutes; approx. 2 min/side. It's thin and cooks quick.
  • Put the steak on Traeger or charcoal grill until internal temp is about 115° F, this is mostly for a little extra smoke flavor, just make sure internal temp doesn’t exceed 115° F.
  • Rest for a few minutes, then enjoy. Season with a bit more salt.
